Buttery drop biscuits

Ingredients
- 2 1/2 cups | 280 grams – All purpose flour
- 1 Teaspoon – Baking powder
- 1/4 teaspoon – Baking soda
- 1/2 Teaspoon – Kosher salt
- 3 tablespoon – granulated sugar (optional)
- 1 stick | 1/2 cup of Butter – frozen and grated
- 1 cup of Heavy cream, milk, alternative milk of choice
Instructions:
- Preheat oven to 420 degrees Fahrenheit, with one in the center. Grease cast iron pan with oil or extra butter. If you decide you’re using a baking sheet, I found that using parchment paper works best since the bottoms of the biscuits crisps nicely.
- In a large bowl, combine AP flour, baking powder, kosher salt, baking soda (and sugar if using). Mix well and set aside.
- In a medium bowl or plate, grate frozen butter into large chunks, resembling shredded cheese. Add butter to the dry ingredients and cut into flour with a knife, pastry cutter or fingers tips until the mixture turns into a coarse crumbles. Note: My hands tend to be on the warmer side, which melts the butter fast. I prefer to use a pastry cutter or knife when incorporating the dry ingredients and butter together to keep the butter from melting.
- Add 1/2 cup of cream (or your liquid of choice) to the dry ingredients and with a spatula slowly fold mixture together. Slowly at 1/4 cup of cream at a time, you’ll want to ensure you do not over mix which activates the gluten in the flour. You may not need to use the all of the milk measured out, it really depends on how much your flour has absorbed. Once all the dry ingredients have absorbs the liquid, stop mixing. The dough itself will looks clumpy and wet, which is perfect!
- Scoop about 1/2 cups of biscuit dough into the cast iron pan. Depending on the size you’re going for, you can increase or decrease amount of dough per drop.
- Put pan in oven and bake for 25-30 minutes, or until the edges of the biscuits are golden brown. Remove from oven and let cool slightly before transferring to cooling rack.
- Enjoy with your favorite jam, clotted cream or make into a delicious breakfast sandwich!
